Poppy Brasserie

Early-risers who want to kick-start a day of sightseeing, skiing or hiking, can catch the first rays of morning light on the mountain peaks opposite the Poppy Brasserie's expansive windows.

You'll be greeted with offers of fresh orange juice, coffee and tea, followed by a menu of gourmet choices. Or dine like the hearty mountaineers who first ascended these towering peaks at our generous Full Mountain Breakfast Buffet, with its wide selection including eggs made to order, meats and cheeses, luscious fruit, freshly baked breads and pastries.

Later, drop by for a leisurely lunch, an early dinner or just for dessert. The Poppy's à la carte menu showcases many international specialties including Savory Tomato Bruschetta with herb boursin cheese, crisp baguette & olive tapenade and Smoked Duck Pear Salad with baby greens, sun dried cranberry compote and orange segments & port reduction. Main course choices also span the globe from Herb Roasted Rack of Lamb with rosemary & mint lamb jus & roasted garlic mashed potatoes to classic English-style Fish and Chips. Be sure to save room for dessert - try the decadent Warm Chocolate Lava Purse.

Seen through the room's signature Palladian window, the awe-inspiring Victoria Glacier, surrounding Rocky Mountain peaks, birds circling the forested slopes and dramatic sunsets. A Canadian treasure of fine beverages, glorious views and classic style, this perfectly situated nook is far more than just a place for drinks.

Certainly, the knowledgeable staff is quick to serve the libation of your choice, whether your pleasure is a Bloody Mary, a modern take on the Martini or a cherry-flavored Belgian beer - one of a dozen tastefully varied imports available. But they are just as pleased to brew a perfectly frothy cappuccino or decadent specialty coffee. Or present a palate-pleasing glass of smooth red or crisp and fruity white wine. Glacier Saloon

Swing through the doors of our Glacier Saloon for a footloose and fancy-free journey to the wild west. The friendly spirit of the legendary cowboy brands this casual place to meet and mingle where you will feel equally comfortable in jeans or elegant dinner suits and dresses.

Sip a cocktail, shoot a game of pool, sit back and listen to the music, even do some dancing. Open from late afternoon to the wee hours for drinks, easygoing pub meals, light snacks and nightcaps. In winter, enjoy the après-ski action. Come summer, relax outside on the Saloon's sunny patio.

The Victoria Room proudly represents the mountain and the queen it is named after: grand, classic and of infinite surprise. Retreat to this oasis from a bygone era where the brilliant blue of Lake Louise stretches out below.

From the table-to-ceiling windows you can look out on a lovely patchwork quilt view of multi-colored flowers and strolling visitors. The interior vistas in this European-styled ballroom are just as fascinating as those outdoors.

Dine surrounded by massive stone fireplaces, glowing chandeliers and folksy alpine portraits at the end of every beam. Imagine brunch buffet tables covered with a lavish selection of hot and cold specialties - dishes like shrimp, sirloin of beef and an entire garden of salads.

Peruse an a la carte dinner menu that offers an appealing mix of familiarity and surprise. Appetizers include Smoked Salmon and Venison Carpaccio. Chateau Lake Louise Special Blend of Tea

The pristine waters of Lake Louise and awe inspiring mountains inspired this specially commissioned tea blend for The Fairmont Chateau Lake Louise.

Peak seasonal teas from the best tea growing regions of the world were selected. From the Kiambu Region in Kenya teas with a floral-like character were chosen because of their golden infusion and flavor. From India's Assam Valley teas that are only available during the 2nd flush (June) give the blend fullness and a deep malty character.

Also from India are piquant flavory teas grown in the Nilgiri Mountains, which complement the high altitude teas from the Dimbula Region in Sri Lanka. To give the tea a burgundy depth and a hint of oakness, Keemun tea from China's Anhui Province were also selected. This tea has sprightly flavor with a lovely finish.
