Amol is a true nature lover, and will begin your experience with a garden tour of his gorgeous eight-acre resort property filled with exotic local fruits and vegetables. Amol serves traditional Hindu Goan cuisine which focuses on subtle flavors with a rich coconut base. During your Goan meal you might enjoy dishes such as chicken xacuti, prawn and fish curry, kismoor (dried roasted prawns with grated coconut), green leafy vegetables stir-fried or in a coconut-based gravy, a coconut milk-based vegetable korma with rice or roti, or pulses with a coconut-based gravy. For dessert you might enjoy brownies, ice cream, or a creamy banana halwa. If you book a cooking experience, learn to cook some of Amol's Hindu Goan family recipes that have been passed down through generations of his family. You will cook together in the resort's professional kitchen and then share a meal with Amol at one of the dining tables in his villa resort. Please note this is a private experience that takes place at Amol's beautiful resort (it does not take place in a local home as many Traveling Spoon experiences do).

Goa is the smallest state of the republic of India. It lies on the country's west coast, about 250 miles south of Bombay. The state covers an area of 1,429 square miles. was headquarters of Portugal's Asian empire. Today, Old Goa is half-hidden in jungle. Its population was severely affected by plague in the 1600's, and a new city was set up at Panaji, which contains the main government buildings. Margao is Goa's biggest commercial center. Mormugao, Goa's major port, has a fine harbor - one of the best on the west coast of India. The harbor is the focus of economic activity in Goa.
